Halloween is almost here and I am up to my ears in pumpkins; pie pumpkins for eating that is! Pumpkin is one of my favourite fall ingredients and I am always searching for and trying tasty new pumpkin recipes. Over the years I have used pumpkin in a wide variety of sweet and savoury dishes including soups, pastas, cakes, muffins, buns, cookies and even some drinks. Given all of the pumpkins around at the stores these days I though I would take the time to share with you my current favourite pumpkin recipes. A lot of these recipes call for pumpkin puree and although it is convenient to buy it canned it is also very easy to make at home. Since pumpkin puree freezes well I like to roast a bunch of pumpkins up to freeze the puree so that I can enjoy it throughout the winter. When you are making these pumpkin recipes keep in mind that you can save the seeds and use them to make a healthy and tasty toasted pumpkin seed snack.
Pumpkin Pie - Dessert is certainly where it is at when it comes to pumpkin and a pumpkin pie has to be one of the best ways to enjoy some pumpkin. This pumpkin pie recipe is perfect for Thanksgiving, Christmas or any other time for that matter!
